PCC series turns fear of cooking into fun

BEAVERTON, Ore. – Whether you are new to cooking or just need a refresher course, a Portland Community College non-credit series will replace the butterflies you feel when pulling out a recipe book with confidence and the ability to produce appetizing meals. The Back to Basics Cooking Series is designed to get you comfortable in the kitchen. Instructor Rana Potter will lead you to discover how simple, satisfying and enjoyable cooking can be while discussing the use of herbs and seasonings, foundation recipes and meals for every occasion. The series of three classes will meet from 1 to 4 p.m. Saturdays, April 9 through April 23, in Room 1411E at the PCC Washington County Workforce Training Center, 18624 N.W. Walker Road. Sign up for the entire series for $95, or an individual class for $39. Classes include:Herbs and Seasonings (April 9). Fresh herbs and seasonings will transform an ordinary dish into the exceptional if you know what you are doing. You will learn how to use herbs and make olive tempenade, pesto with puff pastry and oil infusions for meats and fish.Foundation Recipes (April 16). Learn fast and delicious recipes that can be prepared for everyday eating including: sauteed chicken with greens, avocado and pea salsa, nicoise-style orzo salad, bruschetta of eggplant with red bell peppers, and chicken and avocado wraps.Meals for Every Occasion (April 23). Learning how to prepare dishes correctly will make you a very popular cook. Dishes covered include seafood coconut curry, asparagus, bean and mint salad, and pasta with prawns.
